Back in the day when I first made St Lucia Saffron Buns, they were not really that popular on the blogosphere, let alone gluten-free versions. In order to make them, I relied heavily on Skype conversations with wonderful swedish Uncles (just in case you’re reading Unc 😉 ) and swedish cookbooks. Things have moved along since then and Saffron buns seem to be the in thing. Yep, if Paul Hollywood’s doing em, you know you’re on to a winner! Having said that I actually started making them waaay before Mr Hollywood to coincide with St Lucia Day on the 13th, but I thought I’d rather post it later and be happy with my recipe than rush and end up regretting it. Happy New Year everyone! Before you say it I realise I’m kinda late to write a blog post ushering in the New Year but I’ve been having milk issues! I mean, what do you do when you have waaay too much milk in the fridge and not enough time to do something with it? This is the question I’ve been pondering for quite a while now and with time running out running out and a belly full of milkshake and porridge. I realised I had to do something quick.
Today is St Lucia day and although not a national holiday, it’s celebrated in Sweden. Despite the fact that St Lucia was actually Italian there are hundreds of Swedish girls desperately hoping to be named St Lucia today. They dress in white, wear candles (battery operated!) around their heads then lead a torch-lit procession accompagnied by their hand maidens down the street. Although the Swedes aren’t huge fans of beauty pageants, St Lucia day involves some pretty tough competition and many a Miss Sweden started their careers on the back of St Lucia
St Lucia buns or Lusekatte as they are known is Sweden are a baked treat made with crushed saffron and shaped into the letter ‘S’ or figure ‘8’ based on traditional Christmas bread designs and are distributed in St Lucia’s honour, to thank her for bringing light to dark Swedish Winters (or so the story goes!)
