When it’s autumn and sweet potato season rolls round, I go a little crazy, I put sweet potato in EVERYTHING! Doughnuts, spice buns, make chips out of them, mash them, roast them, dice them, slice them, maybe the only thing I haven’t done yet is put them in a drink!….yeah maybe I won’t go that far,
but the one recipe that triumphed, through my sweet potato journey, the best tasting recipe to come out of all that experimentation was this sweet potato pita bread.

Hey folks, it’s that time again. I meant to post this earlier and I can see some of you have already been making searches for gluten free pancakes and as usual these will not disappoint…..
So I was scrolling through my recipe index and thinking.
I’ve already posted a gluten free recipe for american style or scotch pancakes as they’re known here and let’s not forget the little clouds of heaven but alas English pancakes were nowhere to be seen. I know it’s pitiful, with the Queen’s jubilee just round the corner I’m sure she’ll be hanging her head in shame 😉
To make Lizzy happy, I gave myself a slap on the wrist and got to mixing and they turned out pretty great. English pancakes are thicker than French crêpes but thinner than Scotch pancakes, they are generally sweet rather than savoury and are best served with a dash of lemon and a sprinkle of sugar. I kid you not when I say this recipe was two, three years in the making, it was getting that elasticity, texture and taste in a gluten free mix that was a major issue. I, of course decided to make things harder for myself by making a dairy and gluten free version, but this is certainly no substitute, it has a warm nutty texture and the natural sweetness of hazelnut milk means you don’t have to dump in a gallon of sugar for them to taste good.
The ground hazelnut flour gave it a lovely speckled appearance and they looked and tasted like REAL pancakes. Have a lovely Pancake Day everyone!

Snow is cool.
I admit that initially I had some reservations, once upon a time
and snow isn’t so cool when year after year it brings the whole country to a standstill…….
But the inches deep, I-can’t-believe-it-snowed-all-night-and-all-day kind of snow that crunches under your feet and leaves frost on trees and footprints on the ground is pretty cool.
I have to admit I threw this together with some good old-fashioned leftovers gusto. After my initial excitement and frolic in the snow, I quickly realised that although snow may be cool, it’s also damn cold! Once I’d defrosted my fingers and toes I soon decided that I’d had enough fun in the snow to last the week and refused to make the one hour trek to whole foods or any local shop for that matter, to stock up on baking goods.
So I raided my cupboards, to discover I had what seemed like hundreds of bags and of half opened nuts and a lonely looking box of gluten-free cereal ready to be put to use.
Today marks the 365th day of Curious Baking! 🙂

I’m happy to have survived, a little surprised if the truth be told. I don’t really know what finally got me round to creating this blog, I guess I just I felt my camera needed to be freed of all my baking photos!
Don’t worry I won’t drone on, and reminisce about the highs and lows while doing a round up of the year (I’ll save that for New Year’s Eve 😉 ). I wish I had something witty and profound to say or even inspirational…but I’ll leave the philosophising to well the philosophers and get on to the good stuff…
